Beef chuck, potatoes, carrots, onions, celery, tomato paste, beef broth, thyme, bay leaves. - Instructions:
- Brown beef chunks in a large pot and set aside.
- Sauté onions, carrots, and celery in the same pot. Add tomato paste and stir.
- Return beef to the pot, add beef broth, thyme, and bay leaves. Simmer for 2 hours.
- Add potatoes in the last 30 minutes of cooking.
